Chermoula Chicken with Papaya
I’ve taken North Africa’s most popular marinade, the delicious chermoula, and paired it with the fat-burning, vitamin-rich, healing papaya. Deliciously sweet with soft flesh, papaya is known to be one of the world’s healthiest fruits, so it is a perfect accompaniment to any of my healthy recipes.
Ingredients
-1 chicken breast, the size and thickness of your palm, cut into cubes
-1tsp extra virgin olive oil
-3–4 Little Gem lettuce leaves, or similar
-¼ cucumber, finely chopped
-½ small red onion, finely sliced
-¼ papaya, finely chopped
-pinch of chilli flakes
FOR THE MARINADE
-juice and zest of ½ lemon
-½ tsp ground cumin
-½ tsp ground coriander
-1 heaped tsp fresh, chopped coriander (cilantro), save a little for a garnish
-1 heaped tsp fresh, chopped flat-leaf parsley
-½ tsp paprika
Method
-Make the marinade by combining the lemon juice and zest, cumin, ground and fresh coriander, parsley, and paprika in a bowl.
-Add the chicken, mix well, cover with cling film (plastic wrap) and either leave in the fridge overnight or move on to the next step.
-Add the olive oil to a non-stick frying pan and slowly cook the chicken on a medium heat for 10–15 minutes, or until completely cooked through.
-Place the lettuce leaves on a plate, divide the cucumber, cooked chicken, sliced red onion, and papaya between the leaves.
-Sprinkle with a few chilli flakes, garnish with fresh coriander, and enjoy.
